My initial ideas and research lead me to look at Italian leather which is acclaimed worldwide to be some of the best, due to its prolonged curing and tanning process. This care and consideration that gives Italian leather its ac- creditation was what I wanted my pasta to emulate.

Inspired by the look of leather, I researched foods and avors that would match with my ideas and incorporate well into pasta. Pinus pinea or Stone Pine is an Italian vari-ety of the pine nut tree. This avour works well with pasta as we know from pesto, so I decided to make my pasta look like the bark of this tree to incorporate the aging, avours and workable design of shards as a shape of pasta.

Meal times should be long and a time for life to be shared…the same as the tree and leather take a long time to grow.
